How to Make Yummy Monkey Bar Cookies

As a school kid I remember playing on the monkey bars at recess. That was fun but it doesn't compare to these monkey bars! These Monkey Bars are perfect cookies for after school treats with a glass of milk or cup of hot chocolate. They are great for lunchboxes, office treats, church potlucks, etc. These would also be a good snack to enjoy while watching your favorite team. Make up a batch soon to share with your family and friends.

MONKEY BARS

Cookies And Cream Protein

1/2 cup raisins
1 1/2 tbsp apple juice
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup packed brown sugar
1/4 cup butter, softened
1/2 cup mashed ripe banana
3 tbsp low-fat buttermilk
1 tsp vanilla extract
2 large egg whites
1/3 cup chopped walnuts
Non-stick cooking spray
1 tbsp powdered sugar

Preheat oven to 350 degrees.

Combine the raisins and apple juice in a microwave-safe bowl. Microwave on high for 1 minute; set aside.

Lightly spoon flour into a dry measuring cup and level with a knife. Combine the flour with baking powder, baking soda, and salt in a bowl, stirring well with a whisk. Set flour mixture aside.

Combine the brown sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Add the banana, buttermilk, vanilla, and egg whites, beating well. Add the flour mixture, beating just until combined. Stir in the raisin mixture and the walnuts.

Spread the batter into an 8-inch square baking pan that has been coated with nonstick cooking spray. Bake at 350 degrees for 30 minutes or until golden. Cool the bars completely on a wire rack. Sprinkle with powdered sugar.

Yield: 16 bars at 135 calories, 21 g carbs, 2 g protein, 4.7 g fat

No Bake Peanut Butter Cookie Recipe

This is a simple peanut butter cookie recipe that involves no baking at all, it combines peanut butter with oatmeal. There are several other types of no bake recipes that call for cornflakes. I prefer the ones with oatmeal, it is all based on preference, and I like the texture of the oatmeal best.

2 Tablespoons of butter

1/4 cup cocoa

1/2 cup sugar

1/4 cup milk

1 Pinch of salt

1 Teaspoon of pure vanilla bean paste

1 Tablespoon of peanut butter

1 1/2 cups uncooked oatmeal

First you will get your ingredients all scaled out and a mixing bowl. You will then melt the butter in the microwave for about 30 seconds, you will take it out of the microwave and give it a stir. You will then add the cocoa and start to stir in the cocoa until it is mixed in well. You will then add the sugar, milk and salt and stir all of the added ingredients together. The next thing you will add is the vanilla bean paste, peanut butter, and oatmeal. You will thoroughly combine, and mix the entire ingredients well. You will then take a Tablespoon and spoon out into your hand forming the dough balls into the cookie shape. You will want a baking sheet with parchment for adding the cookies to the sheet. You will put them onto the parchment paper and let them hang out for a while until they have fully set. This should make about 12 cookies.

So, if you are feeding more than your family and are having a dinner party or large family gathering you will need to double the recipe, or even multiply for a larger number to give you the amount you will need for your event.

This is an easy recipe to make, and of course it is a no bake recipe. So if it is during the winter months, and your children are stirring about the house. There is inclement weather outside. This is a great recipe for you to do something together, and for you to both be rewarded at the end.

If you are into protein bars, and are the avid athlete, this will be a bar for you as well. Add some fruit and nuts to this recipe, and you will have a bar that is great tasting, good for you, and will provide you energy for your fun filled adventure as well. Enjoy!

Desserts For Diabetics: Peanut Butter-Chocolate Chip Cookie Bars and Peach Meringue Tart

We diabetics like dessert and sweet treats, too. Don't leave us sitting there watching everyone else enjoy dessert! The recipes in this article make tasty desserts the diabetics in your life are sure to enjoy. And they are very tasty, too. Don't tell the kids and they will enjoy them too. My grandkids eat my diabetic desserts and usually they never know the difference. These peanut butter bars are great for a snack with coffee, hot chocolate, or a glass of milk. They are not messy so they work great for picnics, lunchboxes, tailgating, etc. To go in a completely different direction, try the Peach Meringue Tart.

Cookies And Cream Protein

PB-CHOCOLATE CHIP BARS

Cookies And Cream Protein

3/4 cup whole-wheat pastry flour*
3/4 tsp baking soda
pinch of salt
1 cup peanut butter
1/3 cup Splenda Brown Sugar Blend
1 beaten egg
1/2 cup low-fat milk
1 tsp vanilla extract
1/2 cup sugar-free chocolate chips**

Preheat oven to 350 degrees. Spray an 8-inch square baking pan or dish with nonstick cooking spray; set aside.

In a small bowl combine the flour, baking soda, and salt.

In a medium bowl mix the peanut butter, Splenda, and egg, stirring vigorously until creamy. Add the milk and vanilla extract, stirring until smooth.

Add the flour mixture to the peanut butter mixture stirring until they are well combined. Stir in the chocolate chips.

Spread the dough into the prepared pan. Using the back of a large spoon or your hand, pat dough down until smooth. Bake at 350 degrees for 15 minutes or only until slightly puffy and just starting to get light brown around edges. DO NOT OVERBAKE! Remove from oven and allow to cool 10 to 15 minutes before cutting into 16 bars.

*If you do not have whole-wheat pastry flour, use 1/2 cup whole-wheat flour and 1/4 cup cake flour.

**I use Hershey's Sugar-Free Chocolate Chips. They are very good. If your grocer doesn't have them, use bittersweet chocolate chips.

Per bar: Approximately 137 calories, 12 g carbs, 4 g protein, 8 g (2g sat.)fat, 9 mg cholesterol, 106 mg sodium, 1 g fiber

PEACH MERINGUE TART

2 egg whites
1/8 tsp cream of tartar
1/4 tsp almond extract
1/2 tsp vanilla extract
2 tbsp Splenda Baking Blend
4 fresh peaches, sliced
1 carton (8-oz) sugar-free frozen whipped topping, thawed
1 tbsp sliced almonds, toasted, optional

Beat egg whites with the cream of tartar, almond extract, and vanilla extract until foamy. Add the Splenda and beat until stiff. Place the mixture into an 8-inch pie plate hollowing out center of mixture to form a shell. Bake a 275 degrees for 1 hour.

When shell has cooled, place peaches in the shell. (Depending on the natural sweetness of the peaches, sprinkle with a small amount of Splenda, if needed.) Top peaches with the thawed whipped topping. Sprinkle the almonds over the topping as a garnish, if desired.
